How to prepare our short pastry strudel

Since more than 40 years here at the hotel Césa Tyrol you can enjoy a special strudel . Our family recipe is different from other strudel you can find here in Canazei, his goodness also comes from its simplicity and, with a few tricks, you can also try to prepare this typical desser from our region Trentino, much appreciated by all.

Below we will explain step by step, the ingredients and how to prepare our short pastry strudel with our family the recipe from grandfather Giorgio and that today Domenico, our cook, prepares for you.

Ingredients for 1 standard form of strudel or for 2 small forms (home oven baking tin):

For the dough:

  • 360 g flour
  • 220 g margarinea
  • 150 g sugar
  • 1 egg
  • 1 teaspoon baking powder
  • 1 pinch of salt
  • grated peel of 1 lemon

For the filling:

  • Apples, we use Morgen Duft or Renetta
  • Cinnamon powder
  • Raisins
  • Pounded pine nuts or peanuts
  • Bread crumbs


For the filling, peel and cut the apples in 3-4 mm slices, in a pan or a bowl sprinkle the apples with the cinnamon powder, add the bread crumbs that you have previously toasted
in a pan with a bit of butter (keep some apart for later use), add the raisins and pine nuts, lightly add some rum and lemon juice and mix well.

On the working table prepare a flour fountain, add the backing powder, the gated lemon peel, salt and the egg. The margarine at room temperature must be still worked a little bit to make it even more softer, do not add the sugar for the moment.

Start to mix the flour with the egg and then add the margarine, if it is too dry add a little milk.

When the mixture is well blended finally add sugar, trap it with the dough but do not stir much more, in the end the dough should be quite grainy.

On a kitchen towel dusted with flour, roll out the dough at the desired size, sprinkle with a little bread crumbs and coat well with apples.

Helping yourself with the towel properly close the strudel also at the sides and slide it on a buttered baking sheet and compact the form well. Repeat the same for the second form.

With a beaten egg, brush the surface.

Bake at 185° C for 45 minutes or a little more, depending on your oven.

When the strudel has a golden color it is ready!

Sprinke it with powdered sugar before you serve it and “Buon Appetito”!
